Pound Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. In a large bowl, beat the butter and sugar together until creamy.

  2. Add the egg yolks and mix well.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Gently fold the beaten egg whites into the butter mixture.

  5. Gradually add the flour, mixing until just combined.

  6. Fold in the sliced figs and almonds.

Bake

  1. Pour the batter into a greased loaf pan and bake for about 1 hour or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg whites whipped to stiff peaks add lift and an airy structure to the batter.
Butter
Creamed with sugar, it traps air and gives the cake a tender, rich texture.
Sugar
Creamed with butter, it adds sweetness and helps create a fine, even crumb.
Flour
Provides the structure that sets as the cake bakes.
Figs
Add moisture and natural sweetness to the cake.
Almonds
Add crunch and a nutty flavor that contrasts with the soft crumb.

The step that matters

Folding in the beaten egg whites. Egg whites hold air only while whipped. Folding gently keeps that air in the batter, so the cake rises instead of turning dense and flat.

Swap the lemon

Fit is the average pairing score against egg, sugar, butter, flour, fig, almond. Candidates are from the same food group and used in at least 100 recipes.
