Sicilian Biscuits

Ingredients

Directions

  1. Melt the honey in a copper bowl over low heat, skimming off any froth.

  2. Add the shredded almonds, ground spices, and grated lemon peel; mix well.

  3. Stir in the powdered sugar, Kirschen-wasser, orange-flower water, and candied peels.

  4. Dissolve the carbonate of potash in 1 tablespoon of water and add it to the mixture along with 14 ounces of flour, reserving the rest for rolling.

  5. Gently stir the mixture over the heat for 3-4 minutes, then cover and let it cool for 3 days.

  6. After resting, divide the paste into 4 equal parts and roll each piece to ⅛ inch thick on a floured surface.
