Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Make the curd

  1. Add rennet to warm milk.

  2. Let the mixture sit until curd forms.

  3. Drain the curd through a coarse sieve.

  4. Break the curd gently with your fingers.

Mix and bake

  1. Mix in butter, sugar, nutmeg, grated biscuits, egg yolks, egg white, beaten almonds, rose-water, and sack.

  2. Wash the currants.

  3. Add the currants to the mixture and mix well.

  4. Fill patty pans with the mixture.

  5. Bake in a moderate oven (350°F / 175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the curd base that gives the cheesecake its body.
Rennet
Causes the milk to coagulate into curds, setting the structure.
Egg yolks
Add richness and help the mixture set when baked.
Butter
Adds fat, richness and a tender texture.
Naples biscuits
Add body and absorb moisture, giving the filling a crumbly texture.
Currants
Add sweetness and chewy bursts of fruit throughout the filling.

The step that matters

Let the mixture sit until curd forms. Rennet needs time and steady warmth to coagulate the milk fully. Stopping early leaves a loose, watery curd that will not hold its shape or set properly when baked.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, butter, sugar, biscuit, egg, almond, rose):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Capersfits less well
  4. Allspicefits less well

Fit is the average pairing score against milk, butter, sugar, biscuit, egg, almond, rose. Candidates are from the same food group and used in at least 100 recipes.
