Queen of Puddings

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the pudding

  1. Soak the bread crumbs in milk until soft.

  2. In a bowl, beat the egg yolks, sugar, and butter together, then add the soaked bread crumbs and lemon rind.

  3. Mix thoroughly and bake in a 400°F (200°C) oven until set but not watery.

Top and frost

  1. Once cooked, spread with jelly.

  2. For the frosting, mix the egg whites, lemon juice, and sugar together and whip until light.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the milk to form the soft body of the pudding.
Egg yolks
Enrich the custard and help it set during baking.
Egg whites
Whipped into the frosting to make it light and airy.
Milk
Softens the bread and provides liquid that sets into a custard.
Sugar
Adds sweetness and helps give the frosting body when whipped.

The step that matters

Bake until set but not watery. Egg yolks thicken as they heat, so underbaking leaves a runny custard while overbaking can make it curdle and weep liquid.

  2. Figbetter flavor fit
  3. Peachabout as good a flavor fit
  4. Lemonthe original

Fit is the average pairing score against bread, milk, egg, butter, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
