Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak
Forms the main body of the cakes, giving them their meaty texture and substance.
Egg
Binds the chopped meat so the cakes hold their shape while cooking.
Flour
Dredging coats the cakes, helping them brown in the drippings and thickening the pan juices.
Drippings
Fat for frying that browns the outside of the cakes and adds rich flavor.

The step that matters

Cover the pan closely and simmer. Once boiling water is added, a tight lid traps steam so the cakes cook through gently and stay moist. Lifting the lid or boiling hard would dry the meat and toughen it.

Swap the onion

How well each one fits the dish's main ingredients (pepper, egg, flour):

  1. Spinachfits better
  2. Capsicumfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against pepper, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
