What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Oranges
Add sweetness, juice and bright citrus flavor to the jelly.
Bananas
Add soft texture and mild sweetness to the set jelly.
Malaga grapes
Add juiciness and sweetness, giving bites of fruit throughout the jelly.
Figs
Add chewy texture and concentrated sweetness to the jelly.
English walnuts
Add crunch and a nutty flavor that contrasts with the soft jelly.

The step that matters

Dissolve the gelatin in cold water. Gelatin must be fully hydrated in cold water before hot liquid is added, so it dissolves evenly. Undissolved granules leave lumps and weak, uneven setting.
