Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare and bake

  1. Select uniform medium-sized, smooth-skinned potatoes and scrub well.

  2. Bake the potatoes in a 400°F (200°C) oven until soft.

Fill and finish

  1. Break each potato in two and remove the insides with a spoon.

  2. Mash the insides thoroughly and season with salt, pepper, and a small piece of butter for each potato.

  3. Mix the mashed potato with Chateau Cheese.

  4. Refill the potato shells with the mixture.

  5. Return to the 400°F (200°C) oven until the surface is brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy base that becomes soft, fluffy filling inside the shell.
Butter
Adds fat and richness, making the mashed filling smoother and more flavourful.
Chateau cheese
Adds savoury flavour and fat to the filling and helps the surface brown in the oven.

The step that matters

Mash the insides thoroughly. Thorough mashing breaks down the potato starch cells so the filling becomes smooth rather than lumpy. Lumps left in the filling will not blend evenly with the butter and cheese, which affects texture throughout.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter, cheese):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Mustardfits about as well
  4. Tomatofits about as well

Fit is the average pairing score against pepper, butter, cheese. Candidates are from the same food group and used in at least 100 recipes.
