Fillets with Caper Sauce

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine milk, beaten egg, salt, pepper, and cayenne pepper.

  3. Place fillets in a buttered pan and pour the milk mixture over them.

  4. Spread thick cream over the fillets and surround with thin cream.

  5. Bake for about 20 minutes.

  6. Serve with caper sauce.
