To Pickle Walnuts

Ingredients

Directions

  1. Gather walnuts when the sun is shining and the shell is not hard.

  2. Soak walnuts in a strong saltwater solution for 9 days, stirring twice daily and changing the saltwater every 3 days.

  3. Drain walnuts in a hair sieve and let them air dry until they turn black.

  4. Place walnuts in stone jars and pour boiling ale over them; cover and let cool.

  5. Boil the ale three more times, allowing it to cool between each boiling.

  6. Add fresh ale to cover the walnuts, boiling it with pepper, cloves, ginger, mustard seed, and garlic.

  7. Pour the hot mixture over the walnuts and let it cool.

  8. Seal jars with a bladder and let them sit for 2 months before using.
