Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides sweetness and bulk, and helps the caramel set with a chewy texture.
Molasses
Adds depth of flavour and moisture, and contributes to the caramel colour.
Grated chocolate
Adds chocolate flavour and richness to the caramel.
Boiled milk
Adds creaminess and moisture, softening the set caramel.
Flour
Thickens the mixture slightly, giving it body as it cooks.

The step that matters

Boil the mixture together for 5 minutes. Boiling drives off water and concentrates the sugars, so the caramel sets firm when cooled. Too short a boil leaves it soft and sticky; too long makes it hard and brittle.
