Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Bulk and starch that bind the mash and give the balls a soft, fluffy interior.
Codfish
Provides the salted, savory fish flavor that defines the dish.
Egg
Binds the mash so the balls hold their shape while frying.
Milk
Adds moisture and softness to the mash and creates the body of the sauce.
Flour
Thickens the sauce with the fat, giving it a smooth, cohesive texture.
Hard-boiled eggs
Add richness and a firm, mild texture to the sauce.

The step that matters

Frying the balls in deep hot fat. If the fat is not hot enough, the balls absorb grease and turn heavy and oily; if it is too hot, the outside browns before the centre heats through. Dropping in moderate spoonfuls keeps the temperature steady.

Swap the potato

How well each one fits the dish's main ingredients (egg, milk, flour, pepper):

  1. Capsicumfits better
  2. Asparagusfits about as well
  3. Spinachfits about as well
  4. Potatothe original

Fit is the average pairing score against egg, milk, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
