Why it works: Pepper and onion are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Beef Loaf

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Chop the meat very fine and add the salt and pepper.

  2. Beat the egg and mix it with the meat mixture.

Layer and pack

  1. Press half of the mixture into a loaf pan firmly.

  2. Trim the ends of the hard‑boiled eggs to create flat surfaces and place them on top of the meat mixture in the pan.

  3. Pack the remaining meat mixture on top, pressing it down well.

Bake and serve

  1. Cover and bake in a moderate oven (350°F / 175°C) for over one hour.

  2. Uncover and bake for an additional half hour.

  3. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak
Forms the main body of the loaf and provides its meaty flavor and texture.
Egg
Binds the meat so the loaf holds together when sliced.
Breadcrumbs
Absorbs juices and helps the loaf keep a firm, sliceable texture.

The step that matters

Pressing the meat firmly into the pan. Packing the mixture well removes air pockets and brings the meat particles into close contact, so the loaf holds its shape and slices cleanly instead of crumbling.

Swap the onion

How well each one fits the dish's main ingredients (pepper, egg):

  1. Capsicumfits better
  2. Spinachfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
