Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and whites, folded in stiffly beaten, add lightness.
Minute tapioca
Starch that thickens the milk mixture as it cooks.
Milk
Forms the liquid base that the tapioca thickens into a cream.
Sugar
Sweetens the cream and softens its flavour against the fruit.
Canned peaches
Provide fruit flavour and moisture under the cooled cream.

The step that matters

Adding the egg yolks to the hot mixture. Hot tapioca mixture can scramble egg yolks if they go in too quickly. Stirring a little hot liquid into the beaten yolks first, then combining, keeps the custard smooth. Folding in stiffly beaten whites last preserves the airy texture.

Swap the peach

How well each one fits the dish's main ingredients (milk, sugar, egg, cream):
