Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the body of the soup when rubbed through a sieve, and the reserved flowerets add texture.
Butter
Cooks the aromatics gently and carries their flavor through the soup.
All-purpose flour
Combines with butter to form a roux that thickens the stock and milk.
White stock
Provides the liquid base and savory flavor of the soup.
Milk
Adds creaminess and softens the soup's flavor.

The step that matters

Gradually add the hot white stock, stirring until smooth. Adding hot stock slowly to the butter and flour roux, while stirring, keeps lumps from forming. Starch in the flour thickens the liquid evenly only when it is dispersed before it sets.

Swap the onion

How well each one fits the dish's main ingredients (cauliflower, celery, butter, flour, milk, pepper):

  1. Turnipfits better
  2. Leekfits better
  3. Asparagusfits better
