Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Mix and shape

  1. In a bowl, combine the chopped beefsteak, flour, egg yolks, parsley or summer savory, pepper, and salt.

  2. Press the mixture into a bowl for a few minutes, then remove it.

Bake

  1. Place the mixture into a baking pan and bake at 350°F (175°C) for 30 minutes.

  2. To maintain its shape, wrap a piece of white paper around the loaf and baste well.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beefsteak
Forms the main body of the loaf and gives it its meaty texture and flavor.
Flour
Absorbs moisture and helps bind the chopped meat so the loaf holds together.
Egg yolks
Bind the meat and add richness, setting as the loaf bakes.

The step that matters

Wrap the loaf and baste it well. Wrapping helps the loaf keep its shape while it bakes. Basting adds moisture to the surface, which helps prevent it from drying out in the oven.

Swap the parsley

How well each one fits the dish's main ingredients (flour, egg, pepper):

  1. Turmericfits about as well
  2. Parsleythe original
  3. Nutmegfits about as well
  4. Jalapenofits about as well

Fit is the average pairing score against flour, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
