Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Blanch the almonds and chop them very fine.

  2. Rub the sugar on the lemon rind and pound it in a mortar.

  3. Mix the sugar mixture with the chopped almonds and egg white.

  4. Roll out the puff paste and cut it into your preferred shapes.

  5. Spread the almond mixture over the puff paste.

Bake and serve

  1. Bake in a 350°F (175°C) oven until lightly golden.

  2. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavour of the almond filling.
Sugar
Adds sweetness and helps bind the almond mixture together.
Egg white
Binds the chopped almonds and sugar into a spreadable mixture.
Puff paste
Forms the flaky, crisp base that holds the almond topping.

The step that matters

Bake until lightly golden. Sugar and proteins in the almond mixture brown through the Maillard reaction, so stopping at pale golden keeps flavour and colour balanced without drying the topping.

Swap the almond

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
