Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly with a chewy texture.
White sugar
Sweetens the jelly and helps give it a smooth, tender body.
Lemon juice
Adds acidity that brightens the sweetness and balances the flavour.
Orange juice
Adds fruity aroma and acidity that balances the sweetness.

The step that matters

Boil for 20 minutes. Boiling the sugar syrup concentrates it and drives off water, so the jelly sets firm enough to cut. Too little boiling leaves it soft and sticky, while overboiling can make it tough.
