  2. Place a spoonful of the seasoned meat mixture on one half of each circle.

  3. Fold the circle over to create a puff and seal the edges.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast meat
Provides the savory filling that gives the puffs their main flavor and bulk.
Potatoes
Mashed, they bind with the meat and give the paste a soft, tender texture.
Eggs
Bind the meat and potato mixture so it holds together as a paste.
Flour
Dusted on the surface so the paste does not stick while rolling and cutting.

The step that matters

Sealing the edges before frying. If the edges are not sealed firmly, the filling can leak into the hot oil and the puffs may open or break apart while frying.

Swap the potato

How well each one fits the dish's main ingredients (meat, pepper, egg, flour):

  1. Shallotfits better
  2. Spinachfits better
  3. Capsicumfits better
  4. Potatothe original

Fit is the average pairing score against meat, pepper, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
