The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: 2-nonenal (fatty, green).

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
Forms the body of the preserve, becoming tender and translucent as it cooks.
Sugar
Sweetens the preserve and, as a syrup, preserves the citron and gives it a glossy set.
Lemon
Adds acidity that brightens the sweetness of the syrup.
Alum
Firms the citron so it stays intact and clear during boiling.

The step that matters

Boiling the citron in alum water until clear and tender. Boiling until the citron is fully tender lets it absorb syrup evenly later. Under-boiling leaves it tough, while over-boiling can break the slices apart.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
