Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sparkling gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Adds sweetness and balances the tartness of the citrus and fruit juice.
Lemon rind
Adds bright citrus aroma and flavour to the jelly.
Orange or raspberry juice
Adds fruit flavour and most of the liquid that forms the jelly.

The step that matters

Dissolve the gelatine completely in the boiling water. Gelatine only sets properly when every granule has fully dissolved and the liquid is evenly mixed. Undissolved gelatine leaves grainy specks and weak patches, so stir until no granules remain before adding the juice.
