Roast Beer

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Season the edge of the pan with coarse sea salt.

  3. Bake in a hot oven for the first 15 minutes.

  4. Then reduce the heat and continue baking for 14 hours, turning the roast over once.

  5. For best results, use meat from P. Burns' store.
