Chocolate Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the flour, sweet milk, baking soda, and cream of tartar, mixing well.

  4. In a separate bowl, beat the egg whites until stiff peaks form, then fold them into the batter.

  5. Take one-third of the batter and mix in the cinnamon, spice, and cloves for the middle layer.

  6. Pour the remaining batter into a greased cake pan.

  7. Spread the spiced batter over the first layer.

  8. For the filling, combine the sugar, milk, and butter in a saucepan and heat until dissolved and near boiling.

  9. Add the grated chocolate and boil until it reaches a candy-like consistency, then stir in the vanilla.

  10. Pour the chocolate filling over the cake layers.
