Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten until stiff, they trap air and give the candy its light, airy structure.
Sugar
Cooked into syrup, it sets firm and gives the candy its sweetness and body.
Corn syrup
Keeps the cooked sugar smooth and helps prevent crystallization, giving a tender texture.
Chopped nuts
Add crunch and contrast to the soft, airy candy.

The step that matters

Boiling the second syrup to hard ball stage. Sugar syrup must reach the right temperature to set properly. Too little cooking leaves the candy soft and sticky, while overcooking makes it hard and brittle.

Swap the nuts

How well each one fits the dish's main ingredients (egg, sugar, corn, syrup, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against egg, sugar, corn, syrup, vanilla. Candidates are from the same food group and used in at least 100 recipes.
