In a saucepan, bring the water to a boil.
Dissolve the cornstarch in a little cold water, then stir it into the boiling water.
In a bowl, beat the egg yolks and sugar together, then add the boiling water and cornstarch mixture.
For the meringue, beat the egg whites until soft peaks form, then gradually add the sugar and a little lemon juice until stiff peaks form.
Pour the filling into pie crusts and top with meringue, spreading it evenly.
