Why it works: Mushroom and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 12,525 recipes. Both carry trans-2-decenal, which smells waxy, orange. The science ↓

Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Remove the gills from the oysters and set aside.

  2. Sauté mushrooms in butter until soft.

  3. Mix sautéed mushrooms with breadcrumbs, salt, and pepper.

  4. Stuff the oyster shells with the mixture.

  5. Bake at 350°F (175°C) for 15 minutes until golden.

  6. Serve hot.
