Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard base

  1. In a bowl, combine the stewed and strained apples, sugar, butter, egg yolks, and lemon juice.

  2. Mix until smooth and pour into a baking dish.

Top and bake

  1. In another bowl, beat the egg whites with ½ cup sugar until light and fluffy.

  2. Spread the egg white mixture over the pudding.

  3. Brown slightly in a preheated oven at 350°F (175°C).

What each ingredient does

Apples
Provide the fruit bulk, moisture and tart flavor of the base.
Egg yolks
Thicken the base as they set, adding richness and a smooth, creamy texture.
Egg whites
Whipped into a foam that bakes into a light, airy topping.
Butter
Adds richness and a tender, smooth mouthfeel to the base.
Sugar
Sweetens the dish and helps stabilize the whipped egg white foam.
Lemon juice
Adds acidity that brightens the sweetness of the apples and custard.

The step that matters

Beating the egg whites. Whites beaten with sugar trap air in a stable foam that gives the topping its light, fluffy texture. Underbeaten whites stay runny and can slide off the custard, while overbeaten whites turn dry and grainy.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, egg, lemon):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against sugar, butter, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
