The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. Beat in the milk until the mixture is smooth.

Bake and serve

  1. Fold in the beaten egg whites gently.

What each ingredient does

Egg whites
Whipped and folded in, they trap air that lifts and puffs the soufflé as it bakes.
Mashed potatoes
Provide the bulk and body of the soufflé base, holding the structure together.
Milk
Loosens the potato base and adds moisture so the mixture beats smooth.
Butter
Adds richness and fat, giving a softer texture and flavour to the base.

The step that matters

Fold in the beaten egg whites gently. Egg whites hold air bubbles that make the soufflé rise. Stirring vigorously deflates them, so the soufflé bakes flat and dense. Fold with a light, sweeping motion until just combined.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (potato, butter, pepper, milk, egg):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Dillfits less well
  4. Cinnamonfits less well

Fit is the average pairing score against potato, butter, pepper, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
