Stuffed Sweet Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Cut a slice from one side of each sweet potato and scoop out the inside.

  3. Mash the sweet potato in a bowl, adding butter, salt, and pepper to taste.

  4. Spoon the mixture back into the potato skins and replace the slice on top.

  5. Bake in the oven until thoroughly heated, about 15-20 minutes.

  6. If the potatoes are dry, moisten the mash with a little thick sweet cream before returning it to the skins.
