What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable body as it cools.
Heavy cream
Whipped into air to give the dessert a light, creamy texture.
Canned peaches
Provide the main fruit flavour and soft texture in the set cream.
Peach juice
Adds concentrated peach flavour and liquid to the mixture, sweetened to taste.

The step that matters

Letting the mixture thicken on ice before folding in the cream. If the gelatine mixture is still too thin, the folded-in whipped cream will deflate and separate. If it sets too far, it becomes lumpy and does not blend. Stirring on ice cools it evenly until it thickens slightly.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
