What each ingredient does

Green grapes
Provide the fruit juice that gives the jelly its flavor and pectin for setting.
Granulated sugar
Adds sweetness and helps the juice thicken and set into a jelly.

The step that matters

Boiling the juice with sugar. Sugar and acid must be boiled to the right concentration for pectin to set the jelly. Too little boiling leaves it runny, while over-boiling can make it stiff or cloudy.
