Molasses Candy

Ingredients

Directions

The book gives no oven temperature. The 250°F in the steps was added when the recipe was transcribed, as a starting point.

Make the candy

  1. In a saucepan, combine sugar, molasses, water, vinegar, and butter.

  2. Boil the mixture until it reaches a hair stage (about 250°F or 121°C).

Cool and work

  1. Remove from heat and let it cool slightly.

  2. Once cool, work the candy until it turns white.

What each ingredient does

Sugar
Provides sweetness and the crystal structure that the candy sets around.
Molasses
Adds deep flavour and colour, and keeps the candy soft and chewy.
Vinegar
Adds acidity that helps prevent large sugar crystals from forming.

The step that matters

Boil to the hair stage. Boiling to about 250°F (121°C) sets how much water remains in the sugar syrup. Stopping too early leaves the candy sticky, while going too far makes it hard and brittle.
