Ingredients

Directions

Prepare the dough

  1. Place hard-boiled eggs in cold water until cool.

  2. Remove yolks and place in a mortar with raw yolks to moisten.

  3. Pound yolks until fine, then add white pepper and salt.

  4. Gradually add flour until the mixture is stiff enough to form balls.

Shape and cook

  1. Shape into small balls, as they will swell while boiling.

  2. Bring stock to a boil before adding the balls.

  3. Boil the balls for a few minutes until cooked.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the bulk of the mixture, giving the balls their body and tender texture.
Raw egg yolks
Bind the mashed yolks together and add richness and moisture to the dough.
Flour
Stiffens the mixture so it holds its shape when formed into balls.

The step that matters

Shape into small balls, as they will swell while boiling. Starch from the flour absorbs liquid and expands when heated, so balls shaped too large can swell and crack or become heavy in the pot. Keeping them small leaves room for expansion and helps them cook evenly.

Swap the white pepper

How well each one fits the dish's main ingredients (egg, flour):

  1. Jalapenofits better
  2. Capersfits better
