Why it works: Truffle and ham work together. They rank in the top 12% of all ingredient pairs, and cooks put them together in 516 recipes. Both carry 1-octen-3-one, which smells mushroom, metallic. The science ↓
A Truffle Pie Hot
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Prepare a pie crust according to the size of your dish, at least 3 inches high.
Make the truffle farce as directed in page 173.
Assemble
Fill the pie crust half full with the farce.
Layer in the braised and peeled truffles.
Cover the pie and decorate it.
Bake and serve
Bake in a moderate oven at 350°F (175°C) until done.
Once baked, cut the top off the pie and pour in the Madeira wine.
Replace the top and serve hot on a napkin.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
