Gingerbread in Cakes or Nuts

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a bowl, combine treacle, flour, butter, ground ginger, and moist sugar.

  2. Add chopped citron, lemon peel, orange peel, and zests; mix well.

  3. Make a well in the center and pour in the treacle; mix with a spoon until combined.

  4. Preheat the oven to 400°F (200°C) and prepare baking sheets by cleaning them.

  5. Brush the sheets lightly with warm clarified butter and let them cool.

  6. Drop spoonfuls of the mixture onto the sheets, spacing them evenly.

  7. Bake for a few minutes until done; they should be firm but not overbaked.

  8. Allow to cool on the sheets before transferring to storage.
