Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Dissolves into the water to sweeten the ice and lowers its freezing point for a softer texture.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Egg whites
Whipped to stiff foam, they add air and lightness to the frozen mixture.
Pineapple juice
Provides the main fruit flavour and moisture for the ice.

The step that matters

Fold the egg whites gently into the cooled mixture. Whipped egg whites hold air only while they are stiff. Folding gently keeps that air in, while the mixture must be cool so the heat does not collapse the foam.

Swap the pineapple
