Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the base structure of the batter that coats the potatoes.
Egg white
Whipped to stiff froth, it lightens the batter and helps it puff when fried.
Salad oil
Adds fat to the batter, giving a tender texture and helping it brown.
Potatoes
Provide the soft, moist interior that contrasts with the crisp batter.

The step that matters

Folding in the egg white. Stiff egg white holds air that lifts the batter. Folding gently keeps the air in; stirring it hard deflates the foam, leaving a denser, heavier coating.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, flour, egg):

  1. Jalapenofits better
  2. Nutmegfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against potato, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
