Oatmeal Porridge
Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Bring a pot of water to a boil and add a little salt.
Gradually add oatmeal to the boiling water while stirring continuously.
Simmer the mixture gently for two hours, stirring occasionally.
For overnight preparation, boil the porridge, transfer it to a jar, and place it in a 300°F (150°C) oven overnight.
In the morning, warm it up and add more water if necessary.
To prevent sticking, let the saucepan sit on a cold surface after cooking.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
