Escallopped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Pour off the liquor from the oysters and mix it with 2 cups of milk.

  3. Grease a baking dish with butter.

  4. Layer half of the cracker crumbs in the dish and moisten with the milk mixture.

  5. Spread a layer of oysters over the crumbs, then season with salt, pepper, and butter.

  6. Repeat the layers of crackers and oysters, seasoning each layer, until the dish is full.

  7. Top with the remaining cracker crumbs and dot with butter.

  8. Fill the dish with the remaining milk mixture.

  9. Bake for 45 minutes, removing the lid for the last 15 minutes.
