Scalloped Corn

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Shave the corn from the cobs and scrape down the milky juice.

  2. Cover the bottom of a baking dish with a 1-inch layer of corn, seasoned with salt, pepper, and a little sugar, and add bits of butter.

  3. Repeat layering until the dish is almost full.

  4. Top with rolled cracker crumbs.

  5. Fill the dish with fresh milk and cream.

  6. Bake at 350°F (175°C) for about 45 minutes.
