Mashed Sweet Potatoes

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Steam sweet potatoes until tender.

  2. Mash the sweet potatoes and add enough rich milk and heavy cream to make them quite wet.

  3. Season with coarse sea salt, black pepper, and a little sugar, then beat the mixture until well combined.

  4. Transfer to a buttered baking dish and place bits of butter on top.

  5. Bake in a hot oven at 400°F (200°C) until golden brown.
