What each ingredient does

Cauliflower
Forms the firm, crisp body of the pickle that holds up to the vinegar.
Brine
Salt draws water out of the cauliflower and seasons it before pickling.
Vinegar
Acidity preserves the cauliflower and gives the pickle its sharp, tangy flavour.
Mustard seeds
Release pungent, sharp flavour as they steep in the hot vinegar.
Whole cloves
Add warm, aromatic spice flavour to the pickling liquid.
Stick cinnamon
Adds sweet, woody aroma to the pickling liquid.

The step that matters

Soaking in brine overnight. Salt draws moisture out of the cauliflower, firming its texture and seasoning it. Skipping or shortening the soak leaves the florets wetter and softer, so the pickle can taste diluted and turn limp.
