Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare and layer

  1. Peel and cut the apples into ½ inch square pieces.

  2. In a glass pan, layer the apples, then a layer of bread crumbs.

  3. Sprinkle with sugar, nutmeg, and small pieces of butter.

  4. Repeat the layers, making about three layers, with the top layer being bread crumbs.

Bake and serve

  1. Cover and bake in a moderate oven at 350°F (175°C) for about 30 minutes.

  2. Remove the lid and brown the top.

  3. Serve with cream or butter sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and moisture that softens into the fruit filling.
Bread crumbs
Soak up juices and butter, forming a soft layered texture with a golden top.
Sugar
Adds sweetness and helps the top brown as it bakes.
Butter
Adds richness and fat that carries flavor and helps browning.

The step that matters

Remove the lid and brown the top. Baking covered traps steam and keeps the top pale; uncovering lets dry heat brown the crumbs and sugar, which adds color and flavor.

Flavor stand-ins for the nutmeg

How well each one fits the dish's main ingredients (apple, bread, sugar, butter):

  1. Cinnamonbetter flavor fit
  2. Nutmegthe original
  3. Cloveabout as good a flavor fit

Fit is the average pairing score against apple, bread, sugar, butter. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
