Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the mixture as it cooks and gives the ice a translucent, chewy set.
Sugar
Adds sweetness and softens the set, keeping the ice from freezing too hard.
Lemon juice
Adds acidity that brightens the sweetness and balances the pineapple.
Pineapple
Supplies the main fruit flavor and moisture to the finished ice.

The step that matters

Boil the tapioca until clear. Tapioca starch must be fully boiled to swell and gelatinize; undercooked starch stays cloudy and grainy and will not set smoothly when chilled.

Swap the lemon
