Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble

  1. Layer sliced apples and bread crumbs alternately in a quart pudding dish.

  2. Season each layer with bits of butter, sugar, and a pinch of cinnamon, cloves, and allspice.

  3. Mix molasses and water, then pour over the layers.

  4. Cover the top with additional bread crumbs.

Bake and serve

  1. Place the dish in a pan of hot water and bake at 400°F (200°C) for 45 minutes, or until the apples are soft.

  2. Serve with cream or any sauce.

  3. Optionally, add raisins or chopped almonds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the fruit body and tender texture once softened by baking.
Bread crumbs
Soak up the molasses and butter, forming the soft, layered structure of the pudding.
Butter
Adds fat and richness, carrying the spices through the layers.
Molasses
Adds sweetness, dark color and a deep flavor that browns the top.

The step that matters

Bake until the apples are soft. Apples need enough time in the hot water bath for the starch and cell walls to soften fully; underbaked slices stay firm and taste raw.

Flavor stand-ins for the apple

How well each one fits the dish's main ingredients (bread, butter, sugar, cinnamon, clove, allspice, molasses):

  1. Figbetter flavor fit
  2. Vanillabetter flavor fit
  3. Raisinabout as good a flavor fit
  4. Applethe original

Fit is the average pairing score against bread, butter, sugar, cinnamon, clove, allspice, molasses. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
