What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable pudding as it cools.
Egg whites
Whipped to stiff peaks, they add airy lightness to the set pudding.
Sugar
Sweetens the pudding and balances the tartness of the lemon.
Lemon juice
Adds acidity that brightens the sweetness and flavour of the pudding.
Sherry wine
Adds aromatic flavour to the pudding.

The step that matters

Folding in the egg whites. Whipped egg whites hold air that gives the pudding its lightness. Adding them one spoonful at a time, folding gently, keeps the foam from deflating, while the mixture is cool but not yet setting, so the whites blend evenly without losing volume.

Swap the peach
