Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl tapioca
Swells during soaking and cooking to give the pudding its thick, chewy body.
Egg whites
Beaten whites fold in air and set lightly, giving the pudding a lighter texture.
Sugar
Adds sweetness and helps balance the tartness of the pineapple and lemon.
Pineapple juice
Supplies liquid for cooking the tapioca and adds fruity flavour.

The step that matters

Folding in the egg whites. Beaten egg whites hold air that makes the pudding light. Folding gently keeps that air in, while vigorous stirring would deflate the foam and leave the pudding dense.

Swap the lemon

How well each one fits the dish's main ingredients (pineapple, sugar, vanilla, egg):

  1. Figfits better
  2. Bananafits better
  3. Strawberryfits better
  4. Lemonthe original

Fit is the average pairing score against pineapple, sugar, vanilla, egg. Candidates are from the same food group and used in at least 100 recipes.
