Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peach pulp
Provides the main fruit flavor and body of the mousse.
Gelatin
Sets the mousse so it holds its shape when frozen.
Whipped cream
Adds air and richness, giving the mousse a light, creamy texture.
Sugar
Sweetens the mousse and helps keep it soft when frozen.

The step that matters

Fold in the whipped cream gently and freeze without stirring. Folding keeps the air in the whipped cream, which gives the mousse its light texture. Stirring during freezing would break up the structure and create large ice crystals.
