What each ingredient does

Round steak
Provides the main meat, which becomes tender through long, slow simmering.
Flour
Thickens the cooking liquid into a gravy as it heats with the water.
Onions
Soften and sweeten as they cook, adding flavor to the gravy.
Bacon
Its rendered fat and smoky flavor season the onions and browning beef.

The step that matters

Browning the beef squares on all sides. Browning creates deeply flavored, colored surfaces through the Maillard reaction. Drying the meat surface first and not crowding the pan helps it brown instead of steaming gray.

Swap the onion

How well each one fits the dish's main ingredients (flour, pepper):

  1. Arrowrootfits better
  2. Okrafits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
