Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

Shape the balls

  1. In a bowl, combine the mashed potatoes and the beaten egg; mix thoroughly.

  2. Form the mixture into uniform-sized balls and place them in a well-buttered baking pan.

Top and bake

  1. Make a slight depression in the top of each ball, add a small bit of butter, and sprinkle with pepper and salt.

  2. Bake until golden brown, then serve immediately in a warm dish or deep bowl with white sauce or hot cream around them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the body of the balls, giving a soft, moist interior.
Egg
Binds the mashed potatoes so the balls hold their shape.
Butter
Adds richness and helps the tops brown as they bake.

The step that matters

Shaping the balls. The mixture must be mixed thoroughly and formed into evenly sized balls so they cook at the same rate. Uneven balls bake unevenly, and a loose mixture may not hold its shape in the oven.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, pepper):

  1. Capsicumfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original
