Boiled Asparagus
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Cut off the woody part of the asparagus and wash it well.
In a casserole, lay the asparagus with the heads all in one direction.
Half cover the asparagus with boiling water and cover the casserole.
Place in a 400°F (200°C) oven and cook until tender, about 20 to 40 minutes.
Serve on toast with or without a thin cream sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
